When is a potato not a potato? When it’s a sweet potato of course!
Originating in tropical South America and introduced to Europe by Columbus in the late 15th Century, the sweet potato quickly became a vegetable favourite among the royalty of England and Europe. Although considered by many to be a ‘food of the rich’, due to it’s rareness and price, it wasn’t long before the popularity of the sweet potato had spread to other parts of the world.
Thus we can only imagine how and where Thomas Chipman made his own personal discovery of the venerable sweet potato, but it is hardly surprising that he would soon attempt to transform this sweet flavoured, long, tapered root into yet another delectable chip for our enjoyment.
