Lotus Potato Starch is a very versatile product made from dried, ground potatoes and is a very fine flour. It lends a light, fluffy texture to baked goods and is used in many gluten free flour blends and products. With a very bland flavour, it is ideal as a thickener for sauces or incorporating in gluten free cooking and baking; it has a tolerance to higher heat than cornflour, so try it as a substitute in tempura or other deep fried recipes.
