Ceres Organics Guar Gum is an organic food thickener for cooking and baking to bind, condense and emulsify gluten-free ingredients. Leave it out, and your gluten-free baked goods will likely end up as a heap of crumbs, as we’ve all discovered at some time. With far more thickening power than cornstarch it is also cheaper per gram. Also called guaran, it is a substance made from guar beans which has thickening and stabilising properties useful in various industries, traditionally the food industry, but increasingly the hydraulic fracturing industry. The seeds are dehusked, milled and screened to obtain the gum. It is typically produced as a free-flowing, off-white powder and is classed as a galactomannan.
