Banana and Date Muffins

These muffins are just so easy to make. Not as sweet as a lot of muffins, but with the addition of dates they have those little bursts of sweetness.

2 Cups plain flour (gf)

1/4 tsp xanthan or guar gum

2tsp baking powder (gf)

1 tsp bicarbonate

1 tsp cinnamon

1/2 tsp salt

1 cup chopped dates

3 eggs

3/4 cup milk

1/2 cup oil

1/4 cup sugar

3 ripe mashed bananas (they mash easier if they’ve been frozen and thawed)

Heat oven to 180C, and line a 12 hole muffin tin with liners. (I always spray with oil so the muffin comes out of the paper easily)

Put the first 7 ingredients in a large bowl

Whisk the next 4 together and add to the dry ingredients, then stir in the mashed bananas.

I put 2 ice cream scoops into each paper liner, then bake for about 25 minutes or until cooked through.

Remove from tin to cool

I hope you all enjoy these. They’re not as sweet as a lot of muffins.
