Star Fruit Jam

We've had a bumper crop of star fruit this year; the first year our tree has fruited, plus lots of lemons on our tree just ready to be used. This recipe is based on one by Genius Kitchen on Pinterest. It's so easy to make; who would have thought that star fruit when cooked turn a beautiful rosy red! The pinch of salt just accentuates the delicious flavour.


  • 1.25kg Star Fruit
  • 3.5 Cups of water
  • Juice of 2 lemons
  • 750g Sugar
  • pinch of salt


  • Wash the star Fruit, trim off the very edges of the 'star points'. Chop the fruit.
  • Put fruit in a large saucepan and cover with water. Bring to the boil and simmer until soft (about 15 minutes from when it comes to the boil).
  • Add the lemon juice, sugar and salt, and continue to cook until the jam turns a lovely rosy color and jells when tested on a cold saucer.
  • Pour into sterilized jars.

The basis for this sponge was given to me by my brother in law who used to be a chef, and a very good one too. I've filled in the 'blanks' where he didn't tell me what temperature or how long to cook it, and adapted it to gluten free flour.
