Gluten Free sponge cakes are not the easiest to perfect, but having a good basic recipe to start with helps immensely. The basis for this sponge was given to me by my brother in law who used to be a chef, and a very good one too. I've filled in the 'blanks' where he didn't tell me what temperature or how long to cook it, and adapted it to gluten free flour.
