Gluten Free Cooking Hints and Tips

Gluten Free baking needn't be confusing, and there's no reason why everyone can't produce delicious bakes every time. For me, it's been a journey of trial and error, but with some basic tips, you'll be well on your way. This page will be regularly updated as I uncover more little shortcuts.

I used to wonder why my gluten free cakes just didn't have the texture and rise that wheat based ones seem to. Then I realized two little things:

  1. The bacterial culture introduced by swapping out at least 3/4 of the milk in a recipe with plain Greek yoghurt improves both  the texture and rise of the bake.
  2. Even if your flour mix includes xanthan/guar gum, add a little bit more if you're making bread, muffins or light cakes. The one cake I make regularly that doesn't improve with extra xanthan is my fruit cake because it's such a dense mix.
